Croissants aren’t just for breakfast anymore — today we’re flipping tradition on its head with my Croissant Chicken Grill. This recipe is quick, easy, and full of flavour, bringing together three worlds on one plate: buttery French pastry, bold Southeast Asian herbs, and classic British roast chicken.

This little rebel was inspired by my time working at Patisserie, where croissants were everywhere — but I couldn’t resist giving them a rebellious twist. By mixing pandan leaves, coriander, and spring onion into a herb butter, I’ve created a spread that’s fresh, fragrant, and anything but ordinary. Add in some shredded leftover roast chicken, gooey cheese, and a quick grill, and you’ve got a multicultural mash-up that’s easy, fun, and perfect for lunch.

Ingredients

  • 3 all-butter croissants – or more if you have a bigger family
  • Shredded leftover roast chicken
  • 3 pandan leaves (finely chopped)
  • Small bunch of fresh coriander (chopped)
  • 1 spring onion (sliced)
  • 50g butter (softened)
  • 2 slices of cheese (cheddar or mozzarella)
  • Pinch of salt and black pepper
  • Crisps, to serve

Method

  1. Make the Rebel Herb Butter
    • In a small bowl, mix softened butter with chopped pandan leaves, coriander, and spring onion. Don’t use the green bits of the spring onion we will use this later,
    • Season with a little salt and black pepper.
    • This is your secret rebel spread — fragrant, herby, and ready to transform your croissants.
  2. Prep the Croissants
    • Slice your croissants in half lengthways.
    • Spread a generous layer of your herb butter onto both sides.
  3. Cheese, Please
    • Place a slice of cheese on one half of each croissant.
    • Grill lightly until the cheese just melts — think gooey, not greasy.
  4. Add the Chicken
    • Pile on the shredded roast chicken. This is where yesterday’s roast turns into today’s superstar.
    • Sprinkle with a little extra spring onion for a fresh crunch.
  5. Close, Press, and Serve
    • Close the croissants, give them a gentle press, and plate up with a side of crisps.
    • That’s it — your rebellious, multicultural sandwich is ready in under 15 minutes.
