Sometimes, the best recipes are the simplest ones, but you know me, I couldn’t resist adding a rebellious twist. This isn’t just your everyday baked potato. Oh no. These crispy jacket potatoes are brushed with a punchy mix of salt and pepper, wrapped up snugly in foil, and roasted to perfection. The result? Golden skins, fluffy insides, and the perfect base for whatever bold topping takes your fancy.
It’s budget-friendly, no-stress, and an absolute crowd-pleaser.
Ingredients
- 4 baking potatoes, washed and pricked with a fork
- Drizzle of peanut oil (or any oil if you’ve got allergies)
- 1 tsp black pepper
- Salt to taste
- Foil (enough to double wrap each potato)
Method
- Preheat your oven to 190°C / 375°F.
- Wash and dry the potatoes, then prick them all over with a fork so they cook evenly.
- In a bowl, mix together the oil, black pepper, and salt.
- Open up a sheet of foil, place one potato in the centre, and brush generously with the seasoned oil. Wrap tightly in foil — and if you can, do a double layer.
- Bake for around 60 minutes, or until you can easily slide a knife through the centre.
- Unwrap and serve: my favourite is with beans and oozy Red Leicester cheese (pure comfort), but feel free to rebel with toppings — leftover chilli, tuna, sour cream, or whatever your tastebuds demand.
